Cheddar Biscuits with Garlic Butter

 

These Cheddar Biscuits with Garlic Butter are inspired by the biscuits served at the beloved American seafood chain Red Lobster.  Like the Red Lobster biscuits, they are fluffy and tender thanks to the cheddar cheese and butter worked into the dough.  They also are flavoured with a delicious combination of garlic, butter and cheddar cheese.  I actually prefer this recipe to the Red Lobster original since these biscuits are made from scratch, extra tender and flavourful, and made with real butter.

 

 

 

 

Tips for Making Perfect Biscuits

 

  1. Make sure the butter is cold:  Mixing cold butter into the biscuit dough will ensure the biscuits rise well in the oven – as cold butter facilitates leavening – and are flaky.  If warm butter is worked into the dough, the biscuits will not rise as much and will have a harder texture.
  2. Do not over-mix the dough:  Do not over-mix the dough once the milk has been added or the biscuits will not rise as much in the oven and be tougher.
  3. Serve warm:  These biscuits taste best freshly made and served warm.

 

 

Recipe Q & A

 

Q:  The bottom of my biscuits are getting too dark during baking.  How do I prevent this?

 A:  You can prevent biscuits from becoming too dark on the bottom during baking by doubling up the baking pans.  This means placing the baking pan with your unbaked biscuits on top of a baking sheet and then baking the biscuits.  Doing this allows the heat to dissipate and be less intense at the bottom of the pan resulting in less browning.

 

 

 

Cheddar Biscuits with Garlic Butter

INGREDIENTS

 

Biscuit Dough:

2 cups all-purpose flour
1 tablespoon baking powder
2 teaspoons sugar
3/4 teaspoon garlic powder
1/8 teaspoon cayenne pepper powder
1/8 teaspoon ground paprika
3/4 teaspoon sea salt
112g unsalted butter, cold, chopped in large cubes
1 1/4 cups 2% milk, cold
1 1/2 cups finely grated old cheddar cheese

 

Topping:

2 tablespoons unsalted butter, melted
1/2 teaspoon garlic powder
1/8 teaspoon sea salt
2 teaspoons finely minced fresh parsley

 

 

INSTRUCTIONS

 

Biscuit Dough:
  1. In the bowl of a mixer add flour, baking powder, sugar, garlic powder, cayenne, paprika and salt.  Mix on low speed until blended.  Add the cold butter and mix on low speed until the mixture resembles fine breadcrumbs.  Remove the mixer bowl from the mixer.  Add the cheddar cheese and fold with a spatula until blended.  Add the cold milk and mix with a fork just until the biscuit dough comes together.
  2. Scoop 1/3 cup portions of the biscuit dough unto a baking sheet lined with a silicone mat.  Leave ~2 inches of space in between each biscuit.
  3. Bake the biscuits at 425°F for ~10 minutes until lightly golden.

 

Topping:
  1. Microwave the butter for the topping in a heat-proof bowl until melted.  Add the garlic powder, salt and fresh parsley and stir to combine.
  2. When the biscuits are baked remove them from the oven and brush the butter topping on top of each.  Serve the biscuits warm.
