Raspberry Peach Crisp

 

This Raspberry Peach Crisp reminds me of summertime.  It features a bright and refreshing raspberry and peach filling, topped with a crunchy oat topping.  It is absolutely delicious and also easy to make.  Serve it with a scoop of vanilla ice cream for the perfect summer dessert.

 

 

 

 

 

Tips for Making Perfect Crisp

 

  1. Do not over-mix the topping:  Over-mixing the crumb topping after the butter has been added will give it a tough texture.

INGREDIENTS

 

Crumb Topping:

100g all-purpose flour

100g quick oats

75g white sugar

35g brown sugar

100g unsalted butter, cold, cut into cubes

1 teaspoon cinnamon

 

Filling:

2 cups frozen peach slices

4 cups frozen raspberries

1/2 cup white sugar

2 tablespoons all-purpose flour

 

 

INSTRUCTIONS

 

Crumb Topping:
  1. In the bowl of a mixer add the flour, oats, sugar, and cinnamon.  Mix on low speed using a paddle attachment until blended.  Add the cold butter and mix on low speed just until the mixture has a crumbly texture.  Refrigerate until ready to use.

 

Filling:
  1. Lightly grease a 9-inch square baking pan with butter.
  2. In a bowl combine the white sugar and flour and mix until blended.
  3. Put the peaches and raspberries into the baking pan so that they cover the bottom of the pan and are evenly distributed.  Sprinkle the sugar/flour mixture evenly over the peaches and raspberries.
  4. Sprinkle the crumble topping on top of the filling in an even layer.
  5. Bake the crisp at 375°F for ~35 minutes or until the crumble topping is golden brown.
  6. Let the crisp cool for ~15 minutes before serving.
