Rocky Road 5 Minute Fudge

 

Who knew you could make an incredibly tasty and impressive treat in 5 minutes?  I did not think so until I made this Rocky Road 5 Minute Fudge.  The fudge is composed of a semi-sweet chocolate and condensed milk base, is rich and creamy and full of chocolate flavour.  Roasted and salted peanuts and mini marshmallows are embedded throughout, creating an attractive pattern that resembles a “rocky road”.

 

 

 

 


Tips for Making Perfect Fudge 

 

  1. Mold the fudge right after making: The fudge will thicken quickly as it cools making it difficult to pour into the prepared pan and less smooth looking.  To avoid this mold the fudge immediately after making, when it is still thin and glossy.
  2. Chill the fudge until firm before cutting into squares: If the fudge is cut too soon after it is molded it will be too soft and the squares will look messy.  Refrigerating the fudge until it is firm will make cutting easier and guarantee neater-looking squares.

Q:  Can I substitute the marshmallows and peanuts for other additions?

A:  Yes you can.  The fudge is delicious plain or with other additions such as nuts and candies.

Q:  How do I store the fudge?

A:  It is best to store this fudge in the fridge or freezer because it can get soft at room temperature and contains dairy which should be kept cool.  Store it in an air-tight container.

Q:  What is the shelf-life of the fudge?

A:  It lasts 3 days refrigerated or ~1 month frozen.

INGREDIENTS

 

220g semisweet chocolate chips

1 cup sweetened condensed milk

2 tablespoons unsalted butter

1/2 teaspoon vanilla extract

2/3 cup roasted and salted peanuts

1 cup mini marshmallows

 

 

INSTRUCTIONS

 

  1. Line the inside of a 9-inch non-stick loaf pan with plastic wrap.  Ensure the bottom and sides of the pan are completely covered.
  2. In a large pot add the condensed milk and butter.  Heat the mixture until the butter is melted  and the mixture begins to simmer.  Remove the pot from the heat.
  3. Add the chocolate chips and vanilla extract to the pot.  Let the chocolate chips melt for ~20 seconds, then stir the mixture with a spatula until blended and smooth.
  4. Add the peanuts and marshmallows and mix just until combined.
  5. Pour into the loaf pan and refrigerate overnight or until the fudge is set.  Cut into 1 1/2-inch squares.
