Tips for Making Perfect Fudge
Mold the fudge right after making: The fudge will thicken quickly as it cools making it difficult to pour into the prepared pan and less smooth looking. To avoid this mold the fudge immediately after making, when it is still thin and glossy.
Chill the fudge until firm before cutting into squares: If the fudge is cut too soon after it is molded it will be too soft and the squares will look messy. Refrigerating the fudge until it is firm will make cutting easier and guarantee neater-looking squares.
