Grilled Chicken, Avocado & Bacon Wrap

 

This Grilled Chicken and Avocado Wrap has it all!  Juicy grilled chicken breast, creamy avocado and crispy bacon.  It is a copycat recipe for a favourite wrap of mine from a beloved coffee shop in Fort Langley, B.C.  It is the perfect wrap for cheating on your diet and well worth the calories!  The wrap combines Havarti cheese with grilled chicken, sun-dried tomatoes, avocado, bacon, spinach and red pepper aioli in a soft tomato-flavoured tortilla.  It is filling enough to enjoy for lunch or dinner and delicious served with a side salad.

 

 

Tips for Making a Perfect Wrap

 

  1. Use organic chicken breast:  Organic chicken has a superior flavour to regular chicken and will make the sandwich more flavourful. 
  2. Use freshly grilled chicken:  This wrap tastes superior when the grilled chicken is freshly made instead of made in advance and reheated.
  3. Serve warm:  This wrap is best served warm.  Serve the wrap immediately while the cheese is still melted and the chicken is warm.

 

 

Recipe Q & A

 

Q:   Can I substitute the baby spinach for regular spinach?

A:   It is not recommended.  Baby spinach has a sweeter flavour and more delicate texture than regular spinach and is more suited for this recipe.

Q:   Can I reheat the wrap?

A:   The wrap can be heated briefly in the microwave to warm.  Do not heat it too long since this will wilt the spinach and cook the avocado.

INGREDIENTS

 

2 tomato-flavoured flour tortillas

2 slices havarti cheese (30g each)

1 large grilled organic chicken breast, cut width-wise into 1/2-inch strips

1/2 avocado, thinly sliced lengthwise

4 sun-dried tomato pieces, chopped

2 cups baby spinach

4 strips of bacon

Red Pepper Aioli:

1/3 cup light mayo

1/3 cup chopped roasted red peppers

1/2 tablespoon fresh lime juice

1/8 teaspoon garlic powder

 

 

INSTRUCTIONS
Red Pepper Aioli:
  1. Add the mayo, roasted red peppers, lime juice and garlic powder to a blender container and blend on high until smooth.

 

Assembly:
  1. To assemble each wrap, place a tortilla on a large plate.  Place a slice of havarti cheese on top and heat in the microwave until the cheese is melted.
  2. Place half of the chicken strips in the middle of the wrap.  Drizzle ~ 2 tablespoons of the red pepper mayo on top of the chicken.  Add half of the avocado, half of the sun-dried tomato pieces, 2 strips of bacon and 1 cup of baby spinach on top.  Wrap the tortilla and cut in half diagonally.
