INGREDIENTS
Cake:
1/2 cup canola oil
1 1/4 cup white sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon sea salt
1/3 cup 2% milk
2 teaspoon natural vanilla extract
1 cup 14% sour cream
2 cups fresh blueberries
Crumb Topping:
1/4 cup packed dark brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 1/2 tablespoons (21g) unsalted butter, cold
INSTRUCTIONS
Crumb Topping:
- Combine all of the ingredients for the crumb topping in the bowl of a mixer. Mix on low speed using a paddle attachment until the mixture resembles breadcrumbs. Refrigerate.
Cake:
- Line the bottom of a 9-inch x 9-inch square baking pan with parchment paper.
- In a large bowl add the flour, baking powder and baking soda and stir with a whisk until combined.
- In the bowl of a mixer add the sugar, eggs and salt. Mix on medium speed using a paddle attachment until the mixture is pale in colour. Add the oil and mix until blended. Add the vanilla and sour cream and mix until blended. Add the milk and mix until blended.
- Turn off the mixer and add the flour mixture. Mix on low speed just until blended and smooth.
- Add the blueberries to the cake batter and gently fold using a spatula until combined.
- Pour the cake batter into the cake pan and spread into an even layer covering the bottom of the pan. Sprinkle the crumb topping on top of the cake batter layer in an even layer.
- Bake at 350°F until the top of the cake is set and golden brown.
- Let the cake cool in the pan on a wire rack until room temperature.
